Albertson's Cereal/Milk Run

I know I said I wasn't going to blog for a little while, but this deal is WAY too good to keep in the dark.  Right now you can get select Kellogg's cereals at Albertson's for 3/$5.  PLUS, when you buy 3 select Kellogg's cereals, you get a catalina for a free gallon of milk (or half, up to $3.99).  PLUS, Kellogg's has a mail in rebate for a $10 Mastercard when you buy 10 participating items.  PLUS, you can stack coupons on top of the Albertson's sale!!  PLUS, if you wait until Sunday, you can use doublers and MAKE money on all this!!  And guess what?!  Some of the cereals on sale at Albertson's are the ones for the mail in rebate.  CRAZY!!

I am not going to wait until Sunday because I don't know if I am going to have time for a doubler run, so I went this morning.  It ends up being $1.70 (after rebate) for 10 boxes of cereal and 3 gallons of milk if you do it now.  AMAZING DEAL!!

Here is what I did today:



6 Transactions (at two different stores), each one had 6 boxes of cereal.

6 boxes of Rice Krispies, on sale 3/$5 = $10
- (3) $1/2 coupons 3/6 RP
= $7 and I got 2 catalinas for milk

6 boxes of Crispex cereal, on sale 3/$5 = $10
- (3) $1/2 coupons here (must register and you can print two of each coupon per computer you have)
= $7 and I got 2 catalinas for milk

6 boxes of Corn Flakes cereal, on sale 3/$5 = $10
- (3) $1/2 coupons here (must register and you can print two of each coupon per computer you have)
= $7 and I got 2 catalinas for milk

3 boxes of Corn Flakes, 3 boxes of Crispex, on sale 3/$5 = $10
- (3) $1/2 coupons here (must register and you can print two of each coupon per computer you have)
= $7 and I got 2 catalinas for milk

I did the Crispex and the Corn Flakes transactions twice.  So, I ended up with 36 boxes of cereal and 12 catalinas for milk.  I will go back one more time to get 4 more to make it 40 boxes so I can send in for four $10 rebates (you can send up to 5 per household!!).

SO, after I get four more boxes, I will have paid $46.48 of which $40 will come back to me in prepaid Mastercards making it $6.48.  For this $6.48 I will have gotten 40 boxes of cereal and 13 gallons of milk!!  The shelf cost of all of this is $275.29!!!!  So, I am saving $268.81!!!  Incredible!!

I know you are probably wondering what I am going to do with all of this milk and cereal.  I am going to give some of it away.  I am going to freeze some of the milk (see below).  I am also going to make some breakfast bars, rice krispie treats and snack mix with the cereal

How do you freeze milk?  You open up the milk, and empty out and inch or so to allow for expansion.  You can freeze the milk for up to 3 months.  Defrost the milk in the refrigerator, shake well after it is completely defrosted and use within a few days of defrosting.

Short Break

I am going to be taking a blogging "break" until probably the middle of next week.  My son is going to be having surgery and I need to spend some time with him and my other boys (who will be going to Grandma's for the week) before the surgery and I need to get my house in order since I will be staying with him in the hospital for a week after the surgery in Seattle.  I am hoping to resume blogging after he is feeling a little better and I have some extra time.  Thanks so much for understanding!

Groupon's daily deal today is $2 for 5 movie rentals from Blockbuster Express!  Blockbuster Express is a rental system similar to Redbox.  This voucher is good until May 1, 2013, so even though there isn't a Blockbuster Express in Olympia/Lacey yet, I am going to get one for when there is (or for when we are on vacation or something this summer and want to rent something and there is one in the city we are in).  You are able to get one per person.  If you are not a member of Groupon, you can go here to sign up for free!

Menu Plan Monday, March 21-27



I am going to be out of town for most of this week, so I am not actually going to have to cook for a few days!  SO exciting!!  :)  However, I will still throw in some of my favorite recipes just for fun, even though I won't be cooking them.  :)  Here is what I came up with for the week:

No Weigh José! Mexican Lasagna

Makes 8 Servings

1 1/2 lbs extra lean ground chicken
1 cup each died red onions and diced green bell pepper
2 tsp minced garlic
1 cup canned black beans, drained and rinsed
1 cup diced tomatoes
1/2 cup frozen or canned corn
1 1/2 tsp chili powder
1 tsp ground cumin
2 cups your favorite tomato pasta sauce
1 cup medium salsa
1/4 tsp freshly ground black pepper
2 tbsp minced fresh cilantro
4 large or 8 small whole wheat flour tortillas
1 1/2 cups packed shredded light old (sharp) cheddar cheese (6 oz)
1/4 cup chopped green onions
1 cup light sour cream

1.  Preheat oven to 375°F.  Spray a 9 x 13-inch casserole dish with cooking spray and set aside.

2.  In a large, non-stick pot or skillet, cook ground chicken, onions, green pepper, and garlic over medium-high heat until meat is no longer pink.  Break up any large pieces of chicken as it's cooking.

3.  Add black beans, tomatoes, corn, chili powder, and cumin.  Cook and stir for 2 more minutes.  Add pasta sauce, salsa, and black pepper.  Bring to a boil.  Reduce heat to low.  Cover and simmer for 5 minutes, stirring occasionally.  Stir in cilantro and remove from heat.

4.  To assemble lasagna, spread 1/3 sauce mixture over bottom of casserole dish.  Top with 1/2 the tortillas, overlapping and cutting them as necessary to fit.  Top with 1/3 sauce mixture, followed by 1/2 cheese.  Cover cheese with remaining tortillas, followed by remaining sauce.  Sprinkle remaining cheese over sauce and top with green onions.

5.  Cover with foil and bake for 35 minutes.  Uncover and bake 10 more minutes.  Let lasagna stand for at least 10 minutes before slicing for easier serving.  Top each piece with a dollop of sour cream.

Glad Thai Dings

Makes 40 meatballs

Meatballs
3 lbs extra-lean ground beef
1/2 cup hoisin sauce
1/2 cup dry unseasoned bread crumbs
6 tbsp finely minced green onions
2 tbsp minced fresh cilantro
2 eggs
4 tsp minced garlic
2 tsp grated gingerroot
2 tsp toasted sesame oil
1/2 tsp each salt and pepper

Sauce
1 cup light coconut milk
1/3 cup hoisin sauce
2 tbsp reduced-sodium soy sauce
2 tbsp light peanut butter
2 tbsp minced fresh basil leaves or fresh cilantro
1 tbsp grated gingerroot
1 tsp grated lemon zest
1/8 tsp crushed red pepper flakes

1.  Preheat oven to 400°F.  Spray a rimmed cookie sheet or large baking pan with cooking spray and set aside.

2.  To make meatballs, combine all meatball ingredients in a large bowl (using your hands works best).  Form meat mixture into 80 1-to 1 1/2-inch meatballs.  Place on prepared pan.

3.  Bake for 18 to 20 minutes, until meatballs are cooked through and nicely browned on the outside.  

4.  While meatballs are cooking, prepare sauce.  In a deep, non-stick skillet, whisk together all sauce ingredients.  Heat over medium-high heat, stirring constantly, until sauce boils.  Reduce heat to medium and cook, uncovered, for 3 minutes, stirring often.  Sauce will thicken a bit.

5.  Add cooked meatballs to sauce and mix well.  Serve hot with stir fry vegetables, rice noodles or alone as an appetizer.

Walmart Run-3/21

I don't normally go to Walmart because it tends to be kind of a hassle for me, but this last week, they had some pretty good deals that I couldn't pass up.  They also changed their coupon policy and now you are able to apply the overage from coupons that are MORE than the item amount to the rest of your purchase (or get cash back). PLUS, there is a mail in rebate on toilet paper and Frosted Flakes that MAKES me money, so I had to do it!  LOL

I did try to do this run a couple of days ago and got a terrible cashier, so I ended up just leaving all my stuff there.  I don't do this very often, but this cashier had NO idea what she was doing, and to make it worse, her superior didn't either, so I was outnumbered by people who did not know their own coupon policy or how coupons worked.  It was not worth it!!  BUT, today when I went, the cashier was AWESOME and her superior was super!  It all worked out!!  YEAH!!

You can do the toilet paper deal (two 12 count double rolls for $0.98!) until tomorrow (when the Albertson's ad expires for the price match), but it looks like the Kelloggs Frosted Flakes are normally $3.50, so you can do that deal until April 15th and actually MAKE $4!  :)  If you choose to do both of them, make sure you do two separate transactions so you can mail in two rebates.  :)

I cannot believe it is Monday again!  It seems like I just made one of these like yesterday!  Time goes by way too fast sometimes!!!

I don't think I like Looneyspoons as much as I like Eat, Shrink and Be Merry.  I don't know if it is because Looneyspoons was written years before Eat, Shrink and Be Merry, so by the time they wrote Eat, Shrink and Be Merry they were more experienced.  Or maybe it is because Eat, Shrink and Be Merry has more fresh ingredients.  Anyhow, I like the newer book better.  I will continue to make things out of Looneyspoons, because I am sure there are things in there that are fabulous, but last weeks meal were only so-so in my opinion.

This week I think I am going to try some recipes out of some magazines I got this month.  I always like trying those out as well!  :)  And it seems like I get so many magazines a month, I should really utilize them for something other than the coupons inside!  :)

I realize this week is St. Patrick's Day and that Corned Beef or something Irish is supposed to be on the menu for Thursday.  My son has a science fair that evening, though, so I made Corned Beef and Cabbage with Soda Bread yesterday.  The recipes I used (use links) turned out to be awesome and it was absolutely delicious!  :)

Indian Pizza

Serves 4

1 pound store-bought whole wheat pizza dough, at room temperature
1/4 bunch cilantro, chopped
1 large jalapeño chile, seeds discarded, chopped
1/4 cup extra-virgin olive oil
Salt
4 oz mozzarella cheese, shredded (about 1 cup)
1 1/2 tsp curry powder
1/2 pound ground beef or dark-meat turkey
1 zucchini, halved lengthwise and cut crosswise 1/4 inch thick
1/4 large red onion, sliced

1.  Invert a 13-by-18 inch baking sheet onto the bottom of the oven.  Preheat the oven to 500°F.  Oil a second baking sheet and stretch pizza dough to fit the pan.

2.  In a mini food processor, pulse the cilantro, jalapeño and 2 tbsp olive oil until a paste forms; season with salt. Spread the paste on the dough, then sprinkle with the cheese.

3.  In a medium skillet, heat the remaining 2 tbsp olive oil over medium heat.  Add the curry powder and cook, stirring, for 30 seconds.  Add the meat, season with salt and cook, breaking up the meat, until just barely cooked, about 2 minutes.  Stir in the zucchini and onion.  Top the pizza with the meat mixture.  Place the baking sheet on the preheated baking sheet in the oven and bake until the crust is golden, about 20 minutes.

Cluck à l'Orange

Makes 4 Servings

Four 6- to 8-ounce skinless, boneless chicken breasts halves
Salt and Pepper
2 tbsp flour
3 tbsp extra-virgin olive oil
1 large shallot, finely chopped
1 1/3 cups chicken broth
3 oranges, 1 juiced and 2 sliced crosswise 1/4 inch thick
2 tbsp honey
2 tbsp butter

1.  Season the chicken with salt and pepper and dust with the flour.  Ina large, heavy skillet, heat 2 tablespoons olive oil over medium heat.  Add the chicken and cook, turning once, until cooked through, 8 to 10 minutes; transfer to a plate.

2.  Add the remaining 1 tablespoon olive oil and the shallot to the pan and cook, stirring, for 2 minutes.  Pour in the chicken broth and bring to a boil; lower the heat and simmer until reduced by two-thirds.  Add the orange juice and honey and season with salt.  Return the chicken and any juices to the pan to reheat, turning.  Transfer the chicken to a cutting board and thinly slice each breast on the diagonal, reserving the skillet.

3.  Arrange the chicken on a plate and fan the orange rounds on top.  Stir the butter into the skillet sauce and spoon over the chicken.

Beef and Noodle Toss

Makes 4 Servings

8 oz lasagna noodles
12 ox boneless beef sirloin, cut into bite-size pieces
2 tbsp all-purpose flour
1 tbsp olive oil
1 pint grape tomatoes
8 oz sliced crimini or button mushrooms
4 cloves garlic, minced
1 14-oz can beef broth

1.  Break noodles in half; cook according to package directions.  Drain (do not rinse).

2.  Meanwhile, season beef with 1/2 teaspoon each salt and pepper.  Toss with flour.  Heat oil in a 12-inch skillet over medium-high heat.  Add meat, any remaining flour, and the tomatoes to skillet.  Cook 3 to 4 minutes or until beef is well browned, stirring often.  Add mushrooms and garlic.  Cook 5 minutes more.  Add broth; cook 3 to 4 minutes more or until beef is done and liquid is slightly thickened.

3.  Add cooked noodles to skillet; stir gently to coat.  Heat through.  Spoon into pasta bowls to serve.

Feta-Stuffed Chicken Breasts

Makes 4 Servings

4 skinless, boneless chicken breast halves
1/2 cup crumbled feta cheese
1 tsp finely shredded lemon peel
1 tbsp olive oil

1.  Using a sharp knife, cut a pocket in each chicken breast by cutting horizontally through the thickest portion to, but not through, the opposite side.  In a small bowl combine 1/4 cup of the feta cheese and the lemon peel.  Spoon cheese mixture into each pocket.  Sprinkle chicken with salt and pepper.

2.  In a large skillet heat oil over medium heat.  Add chicken.  Cook for 18-20 minutes or until chicken is no longer pink (170°F), turning once.  Sprinkle chicken with remaining feta cheese.

Mango Chicken Salad

Makes 4 Servings

3 skinless, boneless chicken breasts
2 limes
1 cup unsweetened coconut milk
1 tbsp soy sauce
1/2 tsp crushed red pepper
1/2 cup flaked, unsweetened coconut flakes
2 mangoes, seeded, peeled and chopped
Lettuce leaves (optional)

1.  Preheat oven to 350°F.  Cut chicken into bite-size chunks.  Squeeze juice from 1 lime (2 tbsp); cut remaining lime into wedges.

2.  In a large saucepan combine the coconut milk, the lime juice, soy sauce, and crushed red pepper.  Add chicken and bring to boiling; reduce heat and cook, covered, for 12-15 minutes or until chicken is cooked through, stirring occasionally.

3.  Meanwhile, spread coconut in a shallow pan.  Bake, uncovered, for 4 to 5 minutes or until golden, stirring once.

4.  Remove chicken and cooking liquid to a bowl.  Add mangoes; toss to coat.  Sprinkle with toasted coconut.  Spoon onto lettuce leaves to serve.  Pass lime wedges.
